Crema Tacos - Chipotle Chicken Tacos with Cilantro Lime Ranch
I bought these conversation cards on Amazon last week to keep at the table when we are all together for dinner (which is most nights unless my husband's schedule doesn't allow it). One of the questions was "If you could only eat 3 foods for the rest of your life what would they be?" Two of my three boys answered "crema tacos" if that tells you how much they love this recipe. This is a Half Baked Harvest recipe, and the actual name is Crispy Chipotle Chicken Tacos with Cilantro Lime Ranch. All I can say is that we love these. I always use ground chicken and will usually double the recipe to have for two nights + some lunches/snacks after school, etc. I didn't do that last night and we had about 5 tacos left after everyone ate. Don't be afraid to add the jalapenos to the ranch dressing/crema. This is not a spicy dish. Everyone who has ever had them has loved them, and I have served them to a LOT of people.
Time savers and helpful hints:
- Make your crema ahead of time. It gets better the longer it has to set (at least a few hours to a day ahead).
- Take the time to use corn tortilla instead of premade taco shells.
- Work with your tortillas in groups of about 10 or so. Place a stack on a paper plate and microwave for about 30 seconds. Flip the whole stack over and microwave for a minute. You want the tortillas to be really hot. Brush oil on both sides and add a small amount of meat and cheese. If you overstuff, they will flip over in the oven. Trust me...
- I usually cook my meat earlier in the day with my spices and keep in the fridge until ready to use OR I will at least mix my spices for the meat to save a little time when cooking.
- Parchment paper makes this 1000 times easier because the tortillas will not stick to the pan when cooking and no real need to flip if you use parchment paper.
- These can seem like a headache the first few times, but they are super simple and once your method is down pat they don't take long at all!
- If you hate cilantro, leave it out. It won't make a huge difference.
- When warming leftovers, pop in microwave then air fry for a few minutes to crisp shells.
